Recipe Details and Method
- 1 package 340g Ancient Grains
- 2 cups breakfast sausages, diced
- 1 cup onions, diced
- 1 cup peppers, diced
- 4 eggs, poached or sunny-side up
- ½ cup sour cream
- 1 cup cheddar cheese, grated
- Hot sauce, to taste
- 4 tbsp green onions, sliced
- Salt and pepper, to taste
- Optional: butter or oil for cooking
- Cook the sausage & vegetables
Heat a skillet over medium heat with a small amount of oil or butter. Add diced breakfast sausages and cook until browned and cooked through. Add onions and peppers, season lightly with salt and pepper, and sauté until soft and slightly caramelized. Remove from heat and keep warm. - Warm the grains
Heat the cooked ancient grains in a small pot or microwave until hot. Season lightly with salt and pepper if needed. - Cook the eggs
- Sunny-side up: Heat a nonstick pan over medium-low, add a little butter or oil, crack eggs in, and cook until whites are set and yolks are still runny.
- Poached: Bring water to a gentle simmer, add a splash of vinegar, and poach eggs for 2½–3 minutes.
- Assemble the bowl
Divide warm grains between bowls. Top with sausage and onion-pepper mixture. Sprinkle with grated cheddar so it melts slightly. - Finish & serve
Add eggs on top. Dollop with sour cream, drizzle with hot sauce, and finish with sliced green onions.
